How to cook spinach is a simple question, but on that day, it felt heavier than it should have.
I was tired — not just physically, but mentally too. The kind of tired where even deciding what to cook feels overwhelming.

I had spinach at home, but I didn’t want to fry it or turn it into something complicated. I wanted food that felt light, quiet, and comforting. That’s when I remembered this old, simple way of cooking spinach — mixing it with besan and steaming it gently.

This recipe came back to me like a pause. No rushing, no multitasking. As the spinach besan balls steamed, the kitchen felt calmer. Cooking felt less like a chore and more like care.
That day, this recipe reminded me that learning how to cook spinach doesn’t have to mean doing more — sometimes it means choosing the easiest, kindest method.

Steamed Spinach gram flour(besan) Balls in Onion Tomato Gravy

Ingredients

For Spinach Besan Balls

  • Spinach (Palak) – 250 g
  • Gram flour (Besan) – as needed
  • Salt – to taste
  • Green chilli & garlic – to taste
  • Turmeric & red chilli powder – to taste
  • Onion puree – small amount (optional)

For Gravy

  • Oil – 1–2 tbsp
  • Onion puree – 2 onions
  • Tomato puree – 2 tomatoes
  • Salt, turmeric, red chilli powder – to taste
  • Coriander leaves – for garnish

Method

  1. Finely chop and wash spinach.In washed spinach add a little amount of salt so that extra water came out from the spinach. Salt being added to freshly chopped spinach to release excess water before mixing with besan for steamed spinach balls.
  2. Leave it for 15 min and remove the excess water. later you can use that water in the gravy.Excess water released from chopped spinach after adding salt, showing how moisture is removed before cooking.

  5. Steam the balls for 10 minutes until cooked. Let them cool.

    6.Heat oil in a pan, add onion puree and cook until light golden.
